Just when I thought today was great because it’s Cinco de Mayo, I realized it’s also Taco Tuesday. Ummmm, how deliciously fitting!

So I know when you think of Mexican food, “healthy” isn’t usually the first thing that comes to mind. But trust me, not all Mexican food has to be bad for your waistline! Celebrate Cinco de Mayo and Taco Tuesday tonight with these festive lightened-up tacos!
