The best part about soups is they can be seriously healthy and still delicious. I swear by soups to get in my vegetables and some soups even have the power to cure the common-cold. Better yet, they are a meal in one! Soups like this Quinoa Tortilla Soup are packed with protein, veggies and carbs for a complete meal. But even for those ones that aren’t, it’s nothing a little avocado toast on the side can’t fix. My hope is that this recipe will help feed you throughout the week. Making a big batch of soup to have on hand for lunches and dinners is how I meal-prep and selfishly I want you to get on board with me!

Swap the chicken for quinoa in this healthy vegetarian recipe. Quinoa is high in fiber and protein and makes a great non-meat alternative in this spicy Mexican soup. By now it is no secret that I love soup. I’ve said it before and I’ll say it again, I could live off soup and be perfectly content for life. I pretty much eat soup everyday for lunch and could eat it for dinner as well.
