Oatmeal Breakfast Bake

Breakfast is without a doubt my favorite meal of the day, which I know is unusual and weird for most people especially because it is usually the least liked (or even eaten) meal of the day. Side note: breakfast really is the most important meal of the day! It starts your day off right and wakes your body up after being in a resting state all night long. Think about it, the last time you ate was probably 8-12 hours ago! By this point your body is starving and ready for some fuel for the day ahead! For breakfast I am definitely a creature of habit and all throughout high school and even my first couple years of college, every morning it was Special K cereal, milk, and a piece of cinnamon toast. Literally, every morning. But once being diagnosed with a gluten intolerance after my freshman year of college I have had to develop new ways of thinking about cooking and routine eats. For a while I just switched to gluten free cereal, but lately the past year and a half or so I have been all about exploring new breakfast options and creations. By far, my favorite “new” find is oatmeal! The brand I eat is Bob’s Red Mill Gluten Free Rolled Oats. There are seriously hundreds of ways to cook oatmeal and things you can mix in to it! I love mixing fruit such as bananas, apples, strawberries, raspberries, and blueberries to name a few, and peanut butter or almond butter, and topping with cinnamon or nutmeg. These are just a few ideas but there are so many more! Oatmeal is a great breakfast option because it is a great source of complex carbs, which are great for you and help keep you fuller for longer. Oatmeal has 7g of protein which is much more than many cereals, and it is an excellent source of fiber, which most people actually lack in their diets.

For this breakfast I decided to try an oatmeal bake! I usually just cook it in the microwave, but I wanted to try something different. And let me be the first to tell you, it rocked! So to all my oatmeal fans out there, here is a recipe to surely start your day off on the right foot!

Apple Cinnamon Oatmeal Bake

Ingredients:
(makes 6 servings)
– 3 cups gluten free rolled oats
– 3 cups skim milk
– 3 cups water
– 1 chopped apple (could add 1 more chopped apple for more apple flavor if so desire)
– 2 teaspoons cinnamon

Directions:
1. Mix all together in mixing bowl and pour into 13×9 baking pan. Put into preheated oven (350 degrees) for 45 minutes.
2. Once done let cool, enjoy, and save the rest for later and enjoy the next morning! This morning I enjoyed mine by topping it with 2 tablespoons of sweet potato butter from the local farmers market, so delicious and flavorful!
