I’ve recently become more of an expert on staying healthy while traveling. In the past 6 months, I’ve traveled to Seattle, Hermosa Beach, San Francisco, Pinecrest, Folsom, San Francisco, Oakland, Vancouver, Alaska, San Luis Obispo, Malibu, Huntington Beach, Yosemite, and Dallas. In two weeks, I’m going on a long road trip, then Montana, along with a few local road trips, too. It’s safe to say I’m on the road A LOT.
In honor of St. Patrick’s Day, I wanted to create something creamy and green like McDonald’s Shamrock Shake. They always look so festive and delicious! I even woke up craving a milkshake, which is super weird for me. I’ve never really enjoyed ice cream, milkshakes or anything in that family so this was a new experience. I present to you my newest creation, the Healthy Shamrock Shake.
Any other chocolate lovers out there? If so, you’re gonna love this simple chocolate ice cream that takes less than five minutes to come together! I wanted something light this afternoon to balance out the massive breakfast/brunch/lunch combo I had today. My friend mentioned making nice cream and with the new challenge, you know I had to spice up my normal vanilla and mint chocolate chip versions. So, without further ado, a light salted chocolate ice cream!
Remember when I mentioned that I wanted to focus on simple and easy recipes? This is it. When I’m tired and/or lazy after getting done with a long work day, the last thing I want to do is cook a full dinner. I want something quick and easy that’s still healthy and takes under 10 mins. Is that too much to ask for? Pasta is a great option (I love whole wheat, quinoa or zucchini pasta), but even that is stretching it since it takes 9-10 mins to cook, not including boiling. I guess I really do sound lazy, but oh well. Don’t hate me! Sometimes, you just have those days.
