Get ready to have your mind blown. These cauliflower pancakes are low carb and take under 10 minutes to make. Ingredients: 1 head of cauliflower 2 large eggs ½c cheddar cheese ½c bread crumbs ½ tsp cayenne pepper (optional) salt (to taste… try to use as little as possible) olive oil Directions: Chop, grate, or shred the cauliflower into a bowl. Mix in the eggs, cheese, bread crumbs, pepper, and salt to taste. Flatten into pancake shapes, then throw them in a pan with a little olive oil. Voila!
