Easy 5 Minute Dinner: Almond Pasta

Remember when I mentioned that I wanted to focus on simple and easy recipes? This is it. When I’m tired and/or lazy after getting done with a long work day, the last thing I want to do is cook a full dinner. I want something quick and easy that’s still healthy and takes under 10 mins. Is that too much to ask for? Pasta is a great option (I love whole wheat, quinoa or zucchini pasta), but even that is stretching it since it takes 9-10 mins to cook, not including boiling. I guess I really do sound lazy, but oh well. Don’t hate me! Sometimes, you just have those days.

A while ago, I found this amazing pasta that is made with almond flour instead of regular flour. The brand is called Cappello’s and you can buy it online or in some specialty stores. It’s a little expensive, but it’s gluten free and Paleo-friendly. I couldn’t wait to try it. It only has 6 ingredients: almond flour, cage-free eggs, tapioca flour, potato starch, xanthan gum, & sea salt. Not bad, right? The best part? It took a solid 60 seconds to cook. Just ONE minute! For a 5 minute dinner, I made some of the fettuccine and added some veggies and protein.

1 package Cappello’s Gluten Free Fettuccine
2 cups fresh or frozen spinach
1 cup frozen peas
Drizzle of olive oil
Parmesan for topping


Cook the fettuccine according to the directions on the box.
In the last 30 seconds, add the frozen peas.
When the pasta and peas are ready, drain.
Pour back into the pot over medium heat.
Add a drizzle of olive oil and spinach.
Stir until the spinach is wilted.
Put in a bowl and top w/ parmesan.
