Did you know that my recipe for Revolutionary Pancakes makes amazing waffles too?! This morning I made a combination of buckwheat and millet blended with one banana for sweetness, topped with local wild blueberries, maple syrup, goat yogurt and hemp seeds. So. Yum. The best thing about these waffles is that you can cook a double or triple batch, freeze them, and simply pop in your toaster on those busy mornings when you still want to eat well. A true lifesaver, I’m tellin’ ya!
